Day 320

I went up to Kalispell back in October for an extra Canadian Thanksgiving, and I had some of the Dailylife Grandmother’s Refrigerator Pickles…even better than I recalled!  So I got the recipe from my Sister:

“It was really nice to see you last week, glad everyone could make it! Here’s Grandma’s recipe:

Cucumber Recipe

Wash and thinnly slice 7 cups cucumbers. Leave skin on

1 cup green pepper, slice in short  strips

1 cup sliced onion

2 Tablespoons celery seed

2 Tbls. salt

2 cups white sugar

1 cup vinegar

Put vegetables etc. in a large jar. Pour vinegar over top of all.

Refridgerate.

Recipe says they will keep up to 6 months. We have them all eaten well before then!

I let them set a week or two, by then the sugar has dissolved nicely. DO NOT HEAT ANYTHING – it just makes soggy pickles if you do!”

“I don’t bother mixing, just layer everything until they are ready to eat, then stir them up to mix up the peppers etc. It should be plenty of liquid – as the sugar dissolves, more liquid appears!”

And all the rest of the stuff and done!  Other than the wait…

Upon reflection, the two sliced cucumbers it took would have fit into the two jars nicely.  I did sample the short dish that had the overflow this week…it was all gone before I could take a photo of it!  Very good!  Crisper than usual because it hadn’t set very long…seven days?  I forgot to take it out for American Thanksgiving!  I might have to make more later…
